Apple * Cheese Wrap 

Try this tasty and nutritious recipe. It’s nice for a light, healthy lunch for your kids.                                                       

Needed Ingredients:  

1/2 granny smith apple, unpeeled, sliced paper thin,  1 Tbls mayonnaise, 2 tsp honey mustard, 2 whole wheat wraps or flour tortillas, 4 slices cheddar, muenster or swiss cheese,  2 cups baby spinach leaves.                                      

To Prepare:  Mix mayo and mustard, spread wraps with mixture; layer with spinach, cheese, apple slices; fold and wrap tightly; refrigerate overnight.

Lemon Mustard Dressing...
Needed Ingredients:  
 
2 large, organic lemons, juice only
2 TBLS balsamic vinegar
4 TBLS Dijon mustard
3/4 cup extra-virgin olive oil
salt & pepper, to taste
 
Combine lemon juice, vinegar, mustard, salt and pepper.  Slowly whisk in oil, set aside.  Best if made fresh but can refrigerate a day or two.
 
Serving Suggestions:  This is a great dressing for grilled chicken and veggies.  The olive oil will prevent sticking and keep your foods moist.

...SUPER JUICE...
 
Start your day with this refreshing pick-me-up that's packed with flavor and nutrients!  Mix up a batch--it's nice chilled or hot.
 
Ingredients:
1 oz pomegranate juice concentrate (Knudsen)
1 oz cranberry juice concentrate
1 TBSP sliced, fresh ginger,    1 tsp ground cinnamon
2 organic green tea bags, decaf is best
2 packets Stevia Plus (Plant based, gluten-free, natural sweetener)
10 cups boiling water
 
To Prepare:  Place all ingredients in a large, heatproof container.  Pour boiling water over everything, to steep, cover 5 minutes.  Remove tea bags & ginger slices, discard.  Enjoy this antioxidant juice hot or cold.  Juice is best taken fresh but it will keep refrigerated for a day or two.
